झटपट आलू की पकोड़ी बनाने का तरीका


Ingredients

◆ Aloo: 4-5 (medium size), patle tukdo mein kaat liye
◆ Besan (gram flour): 1 cup
◆ Pyaaz (onion): 1 bade pyaaz, patle kate
◆ Hari mirch (green chilli): 2-3, patle kate
◆ Hara dhaniya (coriander leaves): thoda sa, kata hua
◆ Ajwain: 1/2 chammach
◆ Hing (asafoetida): 1/4 chammach
◆ Lal mirch powder: 1/2 chammach
◆ Haldi powder (turmeric): 1/4 chammach
◆ Namak swaad anusar
◆ Pani: pakore banane ke liye
◆ etl (oil): deep frying ke liye


Method

Step- 1. Sabse pehle, aloo ko ache se dho kar pat dry karein aur patle tukdo mein kaat lein.

Step- 2. Ek bade bowl mein besan daalein. Isme ajwain, hing, lal mirch powder, haldi powder aur namak daal kar acche se milayein.

Step- 3. Ab is mixture mein patle kate hue pyaaz, hari mirch aur hara dhaniya daal kar ache se mix karein.

Step- 4. Thoda thoda karke pani daal kar besan mixture ko achhi tarah se ghol lein.  ko smooth banane ke liye dheere dheere pani daalein aur ache se milate rahein.

Step- 5. Gas par ek kadhai mein tel garam karein. Tel garam hone par aloo ke tukde ko besan ke ghol mein ache se lapet kar deep fry ke liye daalein.

Step- 6. Pakore sunehre hone tak talte rahein. Jab pakore ache se golden brown ho jayein, unhe nikal kar kitchen tissue par rakh kar extra tel sokh lein.


Tips

1. Aloo chunne mein dhyan dein: Aloo ko ek saath kaatne se pehle unhe ache se dho lein aur fir sukha kar kaatein. Isse pakore crispy bante hain.

2. Besan ka sahi istemal: Besan ka texture ghol ke liye mahatvapurna hai. Dhyan rakhein ki ghol smooth ho, taaki pakore ache se coat ho sake.

3.Tel ka temperature: Pakore fry karne se pehle tel ko acche se garam karein, lekin itna garam na ho ki pakore jaldi se jaldi bahut dark brown ho jaayein.
